Cook up your own saucy traditions for Family Day

(NC)—Some of the best recipes are the ones that have been passed down from generation to generation. Anna Boiardi definitely agrees. She is the granddaughter of Mario Boiardi and grandniece of Hector Boiardi, Italian immigrants who moved to the US in the early 1900s and later co-founded Chef Boy-ar-dee. That’s right, there really was a Chef Boyardee (the brothers changed the spelling of their last name to make it easier for Americans to pronounce).

“Cooking has always been very important in my family,” explains Anna, who recently came out with her first cookbook of recipes inspired by her family heritage. “When I was younger, I spent countless hours in the kitchen helping my mom and grandmother roll, knead and fold fresh pasta. While I think it is important to know how to cook, I’m also a busy mom and I know it’s not always possible to create a meal from scratch. On those days, moms can add a few simple ingredients to a hearty mealtime starter and make it their own.”

With Family Day just around the corner, now is the perfect time to create some quick and easy family favourites that the kids can help to prepare. The Chef Primavera recipe below requires only six ingredients and takes about 20 minutes to make. It’s sure to have your whole family singing That’s Amore.

Recipe: Chef Primavera

Serves: 4

Time to Prepare: approximately 20 minutes


1 can (398 mL) diced tomatoes

1 cup (250 mL) grated carrots

2 cans (425 g each) Chef Boyardee spaghetti and meatballs

1 cup (250 mL) finely chopped spinach or zucchini

Optional: 1 tsp (5 mL) garlic powder and/or dried oregano (Italian seasoning)

1/2 cup (125 mL) shredded mozzarella or Parmesan cheese, for garnish

Heat tomatoes and carrots.

Add cans of Chef spaghetti and meatballs and spinach or zucchini and heat through.

If desired, add spices.

Garnish with shredded mozzarella or Parmesan cheese and serve.
